Christmas was a blast! I got all sorts of presents. I feel very blessed to have such a wonderful family. The weather sucked, but it didn't damper the mood.
This weekend my mom and I are going to try visit my family in Western Oklahoma. Let's just hope that this new snow they're calling for doesn't keep us from going. It probably won't be til May before I can see them again.
I'm not feeling too great today, but I was expecting it. I ate too much food. It was all SCD friendly, but eating too much of a good thing can still become a bad thing. I will be taking it easy this week, food-wise.
My Banana Nut Cake came out deliciously. I followed the exact diet that was in Breaking the Vicious Cycle except I added 3/4 cup coconut flour to help make it a bit fluffier and hold together better. Tasted like regular Banana Nut Bread to me, which is great!
School is going to be starting soon. I'm a bit nervous about my internet classes. I've never done an online course before, so I hope I have downloaded all the right stuff and will be able to complete the courses (Freshman Comp I and American Federal Government). I'm sure you will see in my previous posts that I did have to switch my math class from online to on campus. Which unfortunately means that I will have class Tuesday and Thursday nights. It's only for four months though, so I think I can handle that.
As for New Years, my goals are to get into the 120's for my weight and to focus even more on getting into remission. I want to get into remission this year. That means no bleeding, no urgency, no frequency. I can do this. :)

Four More Days!!!!
Yay! I don't really have much to update. Things have been pretty busy with Christmas shopping, wrapping, etc. I bought J some rum and me a couple bottles of wine to celebrate the holidays. I will make my banana nut cake on Thursday. I might make some coffee cake too. I haven't decided yet. I don't want to over do it on Christmas and make myself sick, ya know?
I will admit, I've been kind of slacking on my exercise, but it seems like every night I've been busy doing something so all I want to do is get every bit of sleep that I can! As long as I don't start gaining weight though, then I'm alright.
I bought a couple of new sweaters today. I needed something new to wear for Christmas. It seems like I wear the same three sweaters over and over.
UC is doing alright. Same as last week.
I do want to say that one year ago, last Christmas, I was so sick that I had to call J while I was at Walmart because I couldn't even get through the check out line without having to run to the bathroom. It was very depressing. Now, here I am a year later, only going to the bathroom 5 or 6 times a day AND I went out tonight to do some shopping. The crowds were crazy, the lines were crazy and I went through it all without stopping to use the bathroom once.
I call that a miracle.

Only 11 Days til Christmas!
The days are going by so quickly! I went to the Nutcracker Ballet with Mom and the girls. It was fun! J also took lots of pics of us before we left. They turned out great.
UC is doing alright. Still have blood loss, but I'm not going as often. Don't know why I'm still losing blood. Then again, I've only been doing SCD friendly straight for a couple months now. Maybe it will just take time.
I've been trying to get ready for my online classes. J prepped my computer up so I should meet all the requirements for my online....except I read on my syllabus that we will need a head set so we can online chat in the 'classroom'. Only one of my classes 'requires' this. Its my basic math class. I'm going to email the teacher about it and if they seriously expect me to by a headset to do online when my other classes do not, then I will probably drop the online and take the class on campus.
Weight is staying steady between 133-135. That's fine with me, although I do plan on making it a New Year's Resolution to get into the 120's.
I tried one of Jillian Michaels' other work out DVDs. It's called Banish Fat Boost Metabolism. It SUCKS. There's not a beginner's level to it and I think it's definitely more for intermediate and advanced levels. I much prefer the 30 Day Shred. If I can work up to BFBM, then I might like it, but right now, I could hardly handle 15 minutes of it!
Moving on to Christmas, I've got my meals planned out and everything, now I just need to pick up the ingredients, which I will do this Saturday. Lamb sausage and roast, coconut flour, eggs, carrots, etc....It's going to be delicious! I can't wait to try the Banana Nut Cake!

Shopping for Christmas
Only two full weekends left before Christmas and J and I do NOT have our shopping done. Anywhere near done for that matter. We even have birthday gifts to buy for the December birthdays. Hopefully we will get most of it done this coming Sunday.
I didn't feel so great over the weekend. That time of the month showed up and made me feel horrible. I was hurting so bad I told J that sometimes the pain makes me want to die. I think that was the imbalanced hormones talking. I don't really want to die, but the pain from my UC and the cramps from my monthly make it feel as if I were.
Other than that, I'm doing alright. Made SCD coffee cake over the weekend. It was even yummier than the first time! I've also continued to work out and keep my weight in check. J said he can tell I'm toning up! I think my dress for the ballet this Saturday is fitting better as well!
I'm very excited about the Nutcracker Ballet. I'm going with Mom and two other girls. J is going to take our pics before we leave. Did I mention I got J a new camera for Christmas? Not just any camera, I mean a nice photographer's camera. It was really expensive, but that's all he's getting for Christmas and his birthday next month. Still, I'm so happy about how excited he is to use it. He wants to do 'art' photography. I've seem some pics he's done before and he really has a talent for it.
I do have part of my Christmas as well, my black peacoat that I got on Black Friday. J will surprise me with the other half.
Anyhow, last night I made some more of that SCD friendly Deer Chili. I did use a different tomato sauce. I think next tomato I will use the original one I made it with. It tasted better. Not that this batch was bad, it still tasted alright, but it was much better with the other sauce. I've got my Christmas menu planned out as well. I'm going to make a breakfast casserole with eggs, lamb sausage, bacon and possibly, just possibly, a small amount of cheddar cheese. SCD friendly cheddar cheese. I will also make a lamb roast with carrots and asparagus. For dessert, I will make a coffee cake and a banana cake.

It's Over Already?
Thanksgiving flew by. It was yummy though. I made Zucchini Casserole, Cauliflower Potatoes, Turkey, Cranberry Dressing, Deviled Eggs, and Carrot Cake. My favorite was the turkey and the carrot cake. I also fixed myself a Coffee Cake the day after Thanksgiving. Basically, I used the same ingredients in Carrot Cake, except I replaced the carrots with decaf coffee and added more coconut flour. I'm seem to do better with coconut flour than I do almond flour.
My mom and I went out on Black Friday. We arrived at Kohls at 4am! I bought a peacoat that I wanted. It's normally $160 but I got it for $50. I also bought presents for my mom and mom-in-law, not to mention some cute sterling silver jewelry for myself. I couldn't resist! $30 jewelry on sale for $10! Plus I'm a sucker for sterling silver. :)
We still have quite a bit of Christmas shopping left to do though, plus December birthdays. I need to make a list for everyone we need to buy for.
I'm already thinking up things to make for Christmas breakfast and dinner. I might make a breakfast casserole with eggs, bacon, and lamb 'sausage' (all natural of course) for breakfast. Then a lamb roast for dinner with deviled eggs and possibly pumpkin pie and coffee cake.
I'm still doing good with SCD. I'm really getting into baking and trying unusual recipes. I tried making icing for my coffee cake. It turned out alright, but I think I will use less vanilla extract next time. Maybe a little less honey too. I was a little too liquidy, so it came out more like glaze rather than icing.
Weight and health wise I'm doing great. Staying steady between 133 and 135. The 30 Day Shred workout video has been great. It's hard and I'm only on level one. Heck, I've doing level one for two weeks now and I still don't feel ready to move up. I need to build up my endurance more.

Deer Chili Recipe
I said I would post it. Here it is!
SCD friendly Deer Chili
1 lb Venison (I used ground)
1/4 Onion, minced
1 clove garlic, minced
2 cups tomato sauce (I used more like 3 or 4 cups though)
2 cup navy beans (Again, I used more like 3 or 4 cups, I made a big batch)
2 tsp dried Oregano
2 tsp ground Mustard
2 tsp Paprika (I buy natural from Whole Foods)
2 tsp Chili Powder (I buy completely natural kind from Whole Foods)
Add salt and pepper to taste
Cook venison, onion, and garlic until meat is browned. Transfer to a big pot and stir together beans, sauce, all remaining ingredents. Cook til warm.
*Be sure to soak the navy beans over night and boil them for 1-2 hours before adding them to the chili.
I made a big batch for my husband and me. It was SOOO good. Despite the fact that it was SCD friendly, my husband even admitted he liked it and would want me to make it again.

Yummy Deer Chili
I made some SCD friendly deer chili last night. It turned out pretty good, even though I forgot to boil the navy beans before putting them in the chili. I had to let them simmer for about an hour and a half before they were soft enough to eat. It was still delicious though! Next time I won't make the mistake with the beans and will keep the chili thicker.
I'm excited about Thanksgiving! I'm going to make Raw Cranberry Relish for my turkey breast, Cauliflower potatoes, Carrot Cake, Zucchini Casserole, and Deviled Eggs! All of them are from the Breaking the Vicious Cycle book, except for the deviled eggs. All of it will be SCD friendly!
I've never made any of the above recipes, so I hope they turn out okay. Instead of using almond flour, I will be using coconut flour for the carrot cake.
So the health and fitness challenge is going well. So far the hardest thing is drinking at least 64 oz of water a day. Sounds like that would be easy but I don't think about drinking water, I only drink when I'm thirsty. Drinking 64 oz means drinking even when I'm not thirsty. Everything else is alright though. Today I'm going to go without honey (sugar). That's one of the challenges. To go without sweeteners, sugars, or honey for a whole day. Natural sugar in fruit and veggies is fine though. Not too hard to do.
I've also been doing good at working out. This week I'm going to work out Tuesday, Thursday, Saturday, and Sunday. Those are my four work out days every week. I just get up 30 minutes early and do my 30 Day Shred DVD. I also have a new workout DVD for cardio. It's a Biggest Loser workout DVD with Bob, Jillian, and Kim (if you watch that show, you know who I'm talking about).
Eating healthy has really encouraged me to start getting fit. I'm healthier now than I ever was as a teen, aside from the UC. It feels great!
